Slow Roasted Tomatoes



Ingredients:
15ml sugar
15ml extra virgin olive oil
2.5ml salt
2.5ml dried basil
2.5ml dried oregano
1.25ml freshly ground black pepper
2kg plum tomatoes, halved lengthwise (about 16 medium)
Cooking spray

Method:
Preheat oven to 95°C.


Combine first 7 ingredients in a large bowl, tossing gently to coat. Arrange tomatoes, cut side up, on a baking sheet coated with cooking spray. Roast at 95°C for 7 ½ hours.
