Pear and Blue Cheese Salad

A juicy variety of pear, such as Williams, is just perfect in this dish. You can use any type of blue cheese, such as Stilton, or Gorgonzola, in place of the Roquefort.
Rich, dark balsamic vinegar has an intense, yet mellow flavour. Using a variety, such as that made in Modena in the north of Italy, makes a big difference to this salad.




Ingredients:
4 ripe pears
115g Roquefort cheese
15ml balsamic vinegar
30ml olive oil
Sea salt and freshly ground black pepper

Method:
Cut the pears into quarters and remove the cores. Thinly slice each pear quarter and arrange on a serving platter.

Slice the cheese as thinly as possible and place over the pears. Mix the oil and vinegar together and drizzle over the pears. Season with salt and pepper and serve.
