Ingredients:
1 Kg chicken thighs and drumsticks
100ml tomato sauce
100ml mango chutney
5ml garlic purée
Juice of half a lemon
5ml hot red pepper sauce
Method:
Preheat the oven to 200˚C.
Whisk together the tomato sauce, chutney, garlic, lemon
juice and red pepper sauce. Pour over the chicken pieces in a roasting tin.
Roast the chicken for 30-35 minutes or until the juices
run clear when a thigh is pierced with a small knife. Brush the chicken with
the sauce once or twice during the cooking.
