All-Weather Barbecue Chicken

Ingredients:
4 large chicken legs with skin on
75ml tomato sauce
15g soft brown sugar
50ml clear honey
Juice of half a lemon
2 cloves garlic, peeled and finely chopped
Method:
Preheat the oven to 200˚C. Slash through the skin of each
chicken leg across the bone and arrange the legs in a large roasting tin. Roast
for 30 minutes. Pour off any excess fat from the roasting tin.
Whisk together the tomato sauce, sugar, honey, lemon
juice and garlic. Brush the mixture over the chicken and cook for a further 25
minutes, basting a couple of times with the cooking juices until the chicken
pieces begin to caramelise.
Check that the chicken is cooked through – the juices
should run clear when the thickest part of the leg is pierced with a skewer.
Serve immediately.
