Ingredients:
30g butter
1 medium onion, finely chopped
1L
chicken stock
5ml
lime juice
250ml
cream
2.5ml
ground cumin
60ml
chopped fresh coriander
Sea
salt and freshly ground black pepper to taste
Method:
Heat
the butter in a saucepan over medium heat. Add the onion and cook for about 3 minutes.
Add the garlic and cook for a further 30seconds.
Add
the chicken stock, lime juice and avocados and bring to the boil. Reduce the
heat to medium and simmer for about 7 minutes.
Transfer
to a blender and blend until smooth. Return to the pot, adding the cream, cumin
and seasoning. Cook
over medium heat for about 5 minutes. Add the chopped coriander and serve warm.
