dish is a perfect dinner accompaniment at any time of year.
Crunchy, fresh and acidic,
this salad recipe brings a
light touch to a calorie-laden meal.
Ingredients:
1 small cauliflower, cut into small florets
2 carrots, garted
2 celery sticks, thinly sliced diagonally
45ml chopped fresh dill
3 spring onions, finely sliced
40-50ml toasted pine nuts
40-50ml toasted sunflower seeds
Dressing:
125ml apple cider vinegar
60ml sugar
5ml sea salt
80ml sunflower oil
Sea salt and freshly ground black pepper
Method:
In a large bowl, add the cauliflower, carrots, celery, spring onions and dill.
In a medium saucepan, bring vinegar, sugar, salt and oil to a boil. Pour the hot dressing over the cauliflower mixture and toss well. season with salt and pepper.
Allow the mixture to marinate in the fridge for 2 hours.
Sprinkle with roasted pine nuts and sunflower seeds before serving.
