Chicken with Roasted Red Pepper Sauce



Ingredients:
6-8 chicken large thighs
100-150g grated cheddar cheese

Method:
Preheat the oven to 200˚C. Roast the chicken pieces in a roasting pan for 40-50 minutes, or until the chicken is golden and cooked through.

Prepare the Roasted Red Pepper Sauce and transfer to a small serving bowl.

Place chicken portions on a plate, cover with Roasted Red Pepper Sauce, sprinkle grated cheese over the top and season with salt and pepper to taste. If desired, place the serving plate under the grill or in the microwave for 30-60 seconds to melt the cheese.
