Tzatziki Chicken

Tzatziki Chicken

Ingredients:
8 chicken thigh fillets
300ml Greek yoghurt
50ml chopped fresh mint
2 cloves garlic, peeled and crushed

For the Tzatziki:
½ cucumber, deseeded and diced
Salt and freshly ground black pepper

 Method:
Mix the yoghurt with the mint and garlic. Transfer half to a bowl, cover and chill. Place the remainder in a dish, add the chicken thigh fillets and turn to coat in the mixture. Cover and leave to marinate for 4 hours.

Cook the chicken fillets for 7-8 minutes each side under a preheated grill or in a griddle pan over a medium heat. The chicken juices should run clear when the thickest part is pierced with a sharp knife.

Mix the reserved yoghurt with the diced cucumber and season to make the tzatziki. Serve with the grilled chicken thighs.
