Hot and Spicy Fried Chicken

We all love fried chicken.
This is my version with a bit of a spicy blast.
Serve drizzled with Sweet Chilli Sauce.

Ingredients:
12 chicken thighs
1 cup flour
10ml ground coriander
15ml smoked paprika
10ml ground cumin
5ml chilli powder
10ml crushed dried chillies
vegetable oil for deep frying

Method:
Place chicken in a large pan, cover with cold water and bring to the boil.
Simmer uncovered for about 10 minutes until the chicken is almost cooked through.
Drain and cool.
Combine flour, spices and chillies in a bowl and mix well.
Dip chicken in cold water, then in flour mixture.
Deep-fry chicken in hot oil in batches until golden brown and cooked through.
Serve hot drizzled with Sweet Chilli Sauce.
