Ingredients:
2 cups
flour
1 cup
sugar
10ml
baking powder
2.5ml
salt
2 eggs
1 cup
yoghurt
1/3
cup vegetable oil
5ml
vanilla extract
1 1/3
cups fresh strawberries, chopped
½ to ¾
cup white chocolate chips or 100g white chocolate, chopped
Method:
Preheat
the oven to 200 ° C. Line your muffin pan with paper cups or muffin
liners.
In a
large bowl, mix all the dry ingredients together and set aside.
In
another bowl whisk the eggs together until combined. Add the rest of the wet
ingredients (yoghurt, oil and vanilla) and mix together.
Pour
the wet ingredients into the dry. Mix. I use a spatula to fold in the flour and
mix everything together but you can also use a whisk. The batter would
be thick.
Fold
in the berries and the chocolate chips.
Divide
evenly among the 12 muffin cups.
Bake
for about 18-20 minutes or until a tester comes out clean.
Remove
from the oven and after about 5-8 minutes (when they’re cool enough to
handle) transfer to a wire rack to cool completely.
