Select Chicken Recipes

Hello foodie friends. It's been a while since I've shared any of my special recipes. I've missed bringing you all delicious dishes to prepare, but my family complained we were eating too well, the grocery bill was too high, and although they enjoyed my style of cooking, it was just too rich for everyday fare, so we are back to simple family meals and my experimentation has been put on hold. No more cooking up a storm for me for the present, no more madly trying to take suitable photos before the masses devour my attempts at culinary creation. Granted, we do have a big, slap up meal from time to time, perhaps on the weekend or on a special occasion, so we are not going hungry, believe me!
However, I still see an avalanche of delicious dishes, munchies and delicacies on an almost daily basis and thought I'd share them with my foodie friends. If you have seen them before, they must be worth seeing again.... LOL. 

Today, I'm sharing an array of select chicken recipes. My family do love chicken, and having it in a variety of ways allay the monotony of serving the same thing again and again. Coriander Chilli Chicken Skewers


Coriander Chilli Chicken Skewers

Ingredients:
1kg boneless/skinless chicken thighs or breast meat
1/4 cup extra virgin olive oil
6 cloves garlic, minced
3/4 bunch fresh Coriander(save remaining for garnish)
1 teaspoon salt & pepper
Sweet chilli sauce for basting

Method:
Soak skewers in water for 20 minutes to prevent burning.
Cut chicken into 1" cubes and place into bowl. Add olive oil, garlic and coriander in a food processor and pulverize. Pour the marinade into the bowl with the chicken, add teaspoon of salt and pepper and marinate overnight if possible.
Preheat the grill to medium heat and coat with oil. Remove chicken from the refrigerator and put 5-6 pieces of chicken on each skewer. Cook for 4-5 minutes on each side. Brush chilli sauce on chicken just before done cooking to create a nice glaze.

Ingredients

3-4 chicken breasts, skinless and boneless
1 large can of cream of mushroom or celery soup

Directions
Marinate chicken in soup for as long as you can.
Preheat oven to 375F.
Pour chicken and marinade into a baking dish.
Cover with tinfoil tightly to keep the chicken moist.
Bake for 25-40 minutes, depending on your oven, until chicken is no longer pink inside.
Serve with a side of rice and some cooked vegetables.
